Hello! Paul and Jenelle Lasko here! We are the owner’s and operators of The Snowy Flamingo!! Our food truck is a major labor of love! One random day in Colorado, where we have lived for the past 15 years a crazy idea came to mind. I (Jenelle) told Paul that I wanted him to build me a food truck. Specifically a Sno-Ball truck.

I have spent a lot of time in Louisiana over the years. It is one of my favorite food destinations so I take trips to New Orleans and Lafayette as often as possible. Of course he thought I was crazy to sell Sno-Balls in the snow of Colorado…..but I convinced him that these are no ordinary shaved ice…and ABSOLUTELY NOT A SNOW CONE. I took him to New Orleans right away and there we feasted on my favorite treat! The lightest fluffiest ice with the richest most decadent flavors!

We returned home and Paul got to working building our food truck by hand from the ground up!!! I wanted my own spin on the traditional Sno-Ball so I began creating unique recipes. We were scientists for a while figuring out the PERFECT way to make our 10lb ice blocks. The system we have created is immaculate!

When we opened the food truck it was an amazing success! We won best dessert in Castle Rock 2 years in a row. 4 different news spots! A magazine article was written about us! It was mind blowing to us! Our following in Colorado was so loyal and amazing.

We are so so grateful that our dream could become a reality! So grateful in fact that we took the risk and moved to Florida in hopes of running our food truck year round! We work large events, private catering and because we are a Veteran owned and operated business we love to participate in any Veteran related events!

We hope to make the people of Florida just as happy as the people of Colorado! Come by and taste a family created/owned/operated, unique treat made with love!
